As we age, a significant factor affecting the development or worsening of many degenerative diseases, such as diabetes, atherosclerosis, kidney disease, and Alzheimer's, are damaging proteins in our bodies known as Advanced Glycation End products (AGEs). These proteins are consumed in our diet and can also result from the biochemical combination of excess blood sugar tied to diabetes. Found in plants as well as animals, the amount of AGEs in our bodies is affected by how foods are processed and cooked. The mechanisms of diabetes and the relationship of AGEs to aging, especially skin, dietary health, inflammation, and other diseases will be discussed.
